Choosing the right carrageenan grade for dairy
Dairy products need different things from carrageenan. Spoonable products such as yoghurt and cream cheese need body and whey control, so Artagum BA 61 is used at 0.5–1.5%. Liquid milk products need stabilisation at very low dosage, so FM 46 and FM 91a work at 0.1–0.5%. All three grades are produced by Bospres in Indonesia, supplied with technical data and microbiological limits, and can be adjusted or private labelled on request. Store in a cool, dry place at a maximum of 30°C and 60% relative humidity.
